Natural Madagascan vanilla is expensive because every single flower has to be hand-pollinated on the one day it blooms, followed by months of careful curing, while synthetic vanillin can be manufactured cheaply and consistently at scale in a lab — two completely different cost structures for what can smell like a similar note.
A Painstaking, Weather-Dependent Crop
The vanilla orchid’s flower opens for only a matter of hours once a year and must be pollinated by hand in most growing regions, since its natural pollinator is not present in large enough numbers where the crop is farmed commercially. After that, the pods need months of careful sweating, drying and conditioning to develop their signature aroma. Madagascar produces a large share of the world’s natural vanilla, and cyclones or poor harvests there can send prices spiking dramatically overnight.
Why Synthetic Vanillin Is So Different
Vanillin, the primary aroma molecule in vanilla, can be produced synthetically at a fraction of the cost and in effectively unlimited quantity, which is why most affordable vanilla-scented products rely on it.
